Vineyards
The Kayoumi Vineyard is located between Miron and Kadita in the Upper Galilee, planted on a south easterly facing slope at an altitude of about 750 meters above sea level. The climate is typically cool throughout the year with northwestern winds and is often frequented by snow in the winter. The shallow soil mostly consists of generic Terre Rossa and contains a high percentage of stone.
Wine production
The grapes were harvested at night and processed at the Kayoumi Winery, located in close proximity to the vineyard. Following fermentation and maceration with the grape skins to give an elegant flavor filled structure, the wine was aged in French oak barrels for 15 months.
Ageing
The wine was ready to drink immediately upon its release, but is expected to age up to a decade from vintage, if stored in suitable conditions.
Harvest
The fall and winter that preceded the 2012 vintage were considerably colder than previous years, while rainfall was higher than the annual average. This however, was offset by a warm spring that brought about an early and even ripening in the vineyards.
The cold wet autumn and winter, combined with a warm spring and summer, resulted in early fruit development, and in bringing forward the scheduled time of harvest. The grape quality was first class, leading to the creation of this distinctive wine, both rich and balanced.

Harvest
The winter and spring that preceded the 2011 harvest were warmer
than usual, and the rainfall was around the annual average. The cool spring
delayed the awakening of the vineyards by a few weeks. The vineyards
experienced a combination of a relatively cool spring, a pleasant summer with no
significant heat waves, and a few occasions of light rainfall during August,
September and October. This led to late development of the fruit and a slight
delay in the schedule of the harvest. The grapes were of a very high quality,
creating wines which were full of classic character, rich and well-balanced.

Harvest
The winter preceding the 2009 vintage was slightly warmer than
average, leading to premature awakening in the vineyards. Spring and early
summer had favorable weather conditions, but in late August and early
September, the ripening of the grapes in some of the vineyards was completed
early. However, due to the early budding on the vines in 2009, the harvest began
several days earlier than in previous years, but continued until the end of
October. This vintage led to the creation of balanced wines, displaying their full,
varietal characteristics.
