Tasting notes
This wine displays greenish hues and is characterized by strong aromas of gooseberry, freshly cut grass and minerals. Medium to full-bodied with balanced acidity.
Food pairing
Pairs well with goats cheese, quiche and sea food.
Vineyards
The vineyards are grown at an elevation of 850 meters above sea level, in the north of the Golan Heights, where the winters are very cold, and snow normally falls each winter. The temperature during the summer is relatively low, and the region is characterized by north eastern winds and volcanic soil.
Wine production
Following a short maceration on its skins, the grapes were gently pressed, with the greater part of the juice fermenting at a low temperature in stainless steel. The remaining juice was fermented in used oak barrels.
Harvest
The winter preceding the 2016 harvest was slightly cooler than the average (with many positive cold spells). The warm spring temperature led to early blossoming in the vineyards, with a pleasant spring and start to the summer, and no unusual climate changes. The vineyards exhibited an even and balanced ripening, with the harvest beginning a week earlier than normal. The harvest was constant and speedy, which led to the creation of balanced wines, which displayed the full character of their variety.
