Tasting notes
This is a full-bodied wine, possessing characters and aromas of green apples,
peaches, blanched almonds and minerals. The finish is long and balanced.
Food pairing
Pairs well with pasta in a pesto sauce, grilled fish and roasted asparagus.
Vineyards
The Admon and Kayoumi vineyards are located at a cold and high elevation, at
750 -850 meters above sea level, where snow in the winter is not uncommon. The
temperature and humidity during the summer are relatively low, providing excellent
conditions for the cultivation of high quality grapes. The annual rainfall is relatively high,
allowing for even growing of the vines and limited irrigation.
Wine production
Following a gentle pressing of the grapes, part of the juice was fermented in French oak barrels, and continued ageing in the barrels Sur Lies for a further six months. The remaining juice was fermented at a low temperature in stainless steel vats.
Harvest
The winter preceding the 2016 harvest was slightly cooler than the average (with
many positive cold spells). The warm spring temperature led to early blossoming in the
vineyards, with a pleasant spring and start to the summer, and no unusual climate changes.
The vineyards exhibited an even and balanced ripening, with the harvest beginning a week
earlier than normal. The harvest was constant and speedy, which led to the creation of
balanced wines, which displayed the full character of their variety.
